Resumo
The management of pre-slaughter is a critical issue, and it is responsible for significant loss of production. In order to minimize such losses, this study focused on evaluating the impact of the seasons of year, the breeding system and pre-slaughter management on the rates of partial and total condemnation of carcasses and poultry mortality. The experiment was carried at the production unit of broilers in southern Espirito Santo, located in the district of Vargem Grande, in Venda Nova do Imigrante City, Espírito Santo-Brazil. It has used four (4) sheds with an average of 35,000 chickens per shed, of both sexes, from Cobb® breed. Regarding the structure, two sheds had conventional operation, equipped with mechanical ventilation, tunnel type, with positive pressure and having an average density of 13.8 chickens / m2. Two other semi-climatized ones with tunnel-type mechanical ventilation, and negative pressure, having an average density of 14.7 chickens / m2 It was used a randomized-completeblocks design, in a 2x2x2 triple factorial arrangement with 8 treatments, during two seasons (summer and autumn), two intensive production systems (semi-climatized and conventional sheds) and two pre-slaughter operations (with/without water spray). Each treatment consisted of six replicates and the experimental unit of each treatment was represented by a truck that contained 570 transport boxes, with each carton having a capacity of seven (7) animals per box. It was verified that the season of year, the breeding system and the sprinkling of water on the boxes before transport, influenced the condemnation rate of total carcass and chickens’ mortality. The conventional system and the absence of water spray have made chickens more susceptible to total carcass condemnation and mortality. The sprinkling of water on the boxes prior to transport contributed to a reduction in the total condemnation of carcasses and mortality in the summer. On the other hand, its use becomes unnecessary, under conditions of 14-20 ° Celsius degrees, as ambient temperature, recorded during autumn, as it did not influence the quality of the carcasses, nor the mortality of the broilers
