Resumo
The purpose of this research is to understand how the process of organic food expansion in Espírito Santo occurs, understanding food like a central thing, not just as a research object. The theoretical-methodological approach is used to follow the food from the place of commercialization to the place of production, starting from the experience of the field work with the organic and agroecological fairs farmers of the Big Vitória metropolitan region, especially the street market of Jardim Camburi neighborhood. We analyze the movements carried out by the main actors responsible for the expansion of the organic food production meshwork in the state, from the end of the 1960s, when alternative to conventional agriculture was produced, until the boom in the production and circulation of organic foods. The focusing is on street market, the place where there are direct relations between the actors. The narrative constructed by the farmers is privileged, and their subjective relation with produced foodstuffs, the potentialities and difficulties of the production, the relations of kinship between the families of the association with predominance in the street market studied, and the relation of the Farmers with the street market.
