From these plants are obtained the essential oils, that may have properties of medical and economic interest of the population. The Zingiber officinale, cultivated on large scale in Espírito Santo, is popularly known for its properties anti flu, antifungal, anti-inflammatory, antiulceratives and even anti-tumor. This study aimed characterizes the chemical composition of essential oil of Z. officinale Roscoe and evaluate possible mutagenic and antimutagenic activity of different oil concentrations by the Allium cepa test. The essential oil was obtained by hydrodestillation of samples, and the characterization followed the protocol of gas chromatography coupled to mass spectrometry. Were evaluated the phytotoxicity, cytotoxicity, genotoxicity and mutagenicity at concentrations C1 – 3000, C2 – 1500, C3 – 750, C4 – 375, C5 – 187, C6 – 93, C7 – 46 and C8 – 23 mg/L (ppm). It was also verified antimutagenic activity of essential oil of Z. officinale at concentrations C5 – 187, C7 – 46, C8 – 23 mg/L (ppm); three experiments were performed: 1) pre treatment (which the treatment is with essential oil, and later with the mutagenic agent); 2) simultaneous treatment (which the test organism receives the treatment with essential oil and mutagenic agent simultaneously); 3) post-treatment (in this case the treatment is made with mutagenic agent, and later with the essential oil). Analysis of mutagenic activity reveals that only concentrations 3000, 750 and 375 mg/L showed significant results regarding genotoxicity, suggesting no damage fixation. In the antimutagenic analysis, it was observed high rate of reduction of demage in the simultaneous treatment and the post-treatment, suggesting action of desmutagenic and bioantimutagenic activity. Therefore, the data obtained in this study indicate that the essential oil of Z. officinale may have antimutagenic activity in low concentrations (187, 46 and 23 mg/L).
